When I was a kid, most of my friends weren’t even allowed to hold a knife. But my mom? She handed me one and taught me how to use it safely.

She was a phenomenal cook, and one of the very first recipes she passed down to me was her classic Turkish-style kofte. Today, I’m sharing my chicken version, which I make all the time.

Chicken Kofta

These Chicken Koftas are juicy, flavorful, and ready in about 40 minutes.

You can grill them, cook them in a skillet, or bake them in the oven. However you make them, they’re an easy Mediterranean dinner you can pull off any night of the week.

Turn it into a Mediterranean feast

I can almost hear you asking, “Okay, but what do I serve with it?”

I’ve got you. Here are a few of my favorite sides to make it a complete meal:

  • Hummus with sumac onions – Spread hummus on a plate, place the koftas on top, and finish with a handful of sumac onions. It looks impressive but takes just minutes.
  • Mediterranean pasta salad – Serving a crowd? This pasta salad is my go-to. It’s fresh, filling, and always a hit.
  • A simple salad – Keep it light with my Greek Salad or Turkish Shepherd’s Salad. Either one brings a bright, fresh touch to the plate.
